How do you convince people to subscribe to your SaaS in the initial days?

Define your ICP in a really niche way and approach them with white-glove onboarding.
You can set up a small dedicated resource and get them in with a more personalized invitation to test out your offering and provide valuable feedback.

Give a free trial, if your product brings them a benefit or is some kind pain relief the will easily subscribe.
If they don't subscribe make sure to catch up why. Could be pricing or missing features
@hayerhans This. If the value proposition isn't clear, then a free trial is the best way to demonstrate that. It's also important with how you structure it. I noticed if you require payment information to be entered on sign up, it discourages many potential customers.
