I've tried many tools but nothing has changed anything drastically for me.

Every app has it own to advantages and disadvantages.

Of all that I've used till date, I've liked Apple Notes primarily because of its simple and clutter-free interface.

Apple Reminders – I write very briefly and can set up date and times when and what I should do :) + hashtags so I know the topic.

Notion changed the game for me. The flexibility to structure notes exactly how I want, easily link between related notes, and collaborate with others has been a huge productivity boost. Plus the web clipper makes it a snap to save articles and other content. Took me a minute to fully customize it to my workflows but now I can't imagine taking notes any other way.
