Looking for ideas on how to test, and think about product UX. Any good practices that you follow?

Do you have a designer in your team? If so, it should start from them. Also this really depends on the stage of where your product is at. If it's an super early stage without much metrics, it will be done using qualitative research like usability testing or interviews. If you have pretty good number of people using your product, metrics and mass survey of some sort could be added your UX research. Three things that I always think about when running a UX research / testing session . 1. Find the right target users (wrong target user will give you skew data) 2. Think of two to three major user scenarios that you want to improve on. (more than three is too much to focus on) 3. Synthesize right after the session with your partner and complete the session - people often run the test but do not synthesize on learnings. Hope this helps. Good luck!
