I believe that the best and most converting model would be to offer the full premium features for some time (ex: 14 days) and then downgrade back and just offer some basic features forever.
This may give users the opportunity to create some flows (during the first 14 days) that they might want to access or work on at the end of this period.
Downgrading them back to some basic features can be a trigger to subscribe for the product!

Of course, it may change according to the market, but limited rights and days can be defined. If you are sure about the product, I don't think there is any harm in doing it. It can also increase the post-purchase customer retention rate.
It's a bit like gambling, but it's definitely not.
