Easiest SaaS to teach in a workshop

Hello everyone, I’m a Bubble coach and teach workshops at Colleges and universities (and online of course). One of my recent challenges is to figure out the right type of SaaS that newbies can learn. I’ve already figured out he basics such as a todo list app or a twitter clone. What could be something interesting? All suggestions are welcome :)
