Do you recommend any real AI doc processing that actually undestands topics and extracts data?

Imagine this scenario that I'm sure many of you fellow hunters will easily empathize with. A directory that's full of ebooks, white papers, infographics and docs you downloaded over time and always promised yourself you would actually read. Do you suggest or have in mind any tool that could ingest all these pdfs, analyse their content and extract general context, topics and keywords in order to tag or classify and maybe even summarize the main concept? Until now I have always found just promising tools with catchy CTAs and copy but they are just good OCRs to extract information from very strict and predictable formats (bills, invoices, expenses report, etc.) Any thoughts? Thanks for your precious contribution! Just please don't say Chat GPT ;)
