Do we often overcomplicate products beyond user needs?

Take this for instance:
users might just want a simple, sync-able todo list. One list, that's it.
But now, there's an endless stream of todo apps, each more complex than the last.
Honestly, Apple Notes would suffice.
What's your take?
How can we avoid that?

I guess the market will provide an answer to this question. Many individuals use a product not only for its utility but also for entertainment or simply to have something beautiful in their pocket. Therefore, whether it is overly complicated varies from person to person.
