I mostly use Gemini chat to: write stuff, re-write stuff, summarize video content, marketing & UX research
Figma Plugins: Musho (landing page designer)
Web Deisgn tools: Relume (wireframe) and Dora AI (website mock ups)
Imagery: MidJourney just a couple of tries with no success, considering buying a plan atm

I would recommend focusing on practice more than theory. The theory is all around. You can browse "Essential UX design books to read" (don't make me think, UX design team of one, Refactoring Design...). You can also join The Interaction Design Foundation.

This depends on the users of the specific product/service and their expectations about a chat service. You can always start by interviewing your potential or current customers to get the first ideas for developing this service, and gauge if it's something needed or wanted by them.

I've used RescueTime in the past for tracking how much time I spend online, but it doesn't actually track how many times I picked up the phone.

I'm pretty sure you can find scholarly articles about this topic, which will point out to about 4 hours of "productive work" on average. Or so I was told.
I personally do 45min deep work/15min breaks from 9am to 5pm on average.
Some days I work more than others, but it all depends on the nature of the job (contracted or freelance) and how much I have to turn over that day.

I think this definitely depends on the content. Sidebars are useful for filtering content or pages with many section and long-form content like some Blogs. But for a landing page, or a hero type site, or an editorial style site a top navigation or sticky bar is more aesthetic (to display full-screen images or video) and also is more useful IMO.
