To be honest, I mostly focus on understanding the user's needs. Google is good at understanding the best content and your users will spend more time on your site. So I spend a lot of time on the SERPs and looking at things like People Also Asked. It helps find the longer tail queries - especially in Google Search Console as well.

Maybe... I know a few companies that have done well to start with on product-led SEO - e.g. documentation. It works well for super technical products, but less so on B2C ventures.
