I tackled the same problem a while back, also going for a clean, minimalistic approach. I really like your vertical scroll with the horizontal panning approach. Slick implementation. I get the flexibility of saving as a square, but tend to agree that given you have the horizontally panning, I'd personally prefer just to save it straight to device resolution, honoring the current horizontal pan....
