Never. And it makes it hard to focus on one project. You just see something that could be done better, or you just found yourself with a need for which the market has no proper solutions. I use https://plausible.io It's simple but I don't need yet something fancy, also it does not use cookies so you don't need to annoy your users with stupid banners

I create webapps, and in my case, I think about accessibility in the architecture layer. Instead of trying to offer a frontend that is accessible by every case, I try to offer an API so a specific front can be built for every case. If there is a collective with specific needs that are not met by the default front, they can tailor their own front on top of the API.
