I've been using the macOS TextEdit with some extensions (Pure Paste + default format to Plain Text) for "fresh" notes and Slack comments for archival. What do you use?

We use notion for many things, and writing down meeting notes is one of them. While I wasn't a fan to start with, it is pretty useful and keeps it all organized.
