Depends on what I'm building... I've used wordpress, wix, shopiffy as well as building completely from scratch and hosting on GCP or Azure

Elementor! Only because I don’t like my page builder being tied to my hosting.
If not using a page builder, I know next.js and vercel is a popular combination.
For sheer time-to-live speed I'd consider Unicorn Platform by @johnrushx Also because I'm a lazy developer :)
