Is it legal to use these photos in legal documents? I thought that legal photos are not allowed to be digitally edited?

@umberto_abbatantuono regulations are country-specific. In the United States, for example, the content of the photo cannot be altered at all. Technically that would include the background removal performed by this tool. In practice I can't imagine it would actually cause an issue though
