There are many mature AI search tools available now, both open-source and proprietary, does it really make sense to continue developing new AI search tools?

There's still plenty of opportunity in AI search! New models and techniques are constantly emerging. The key is finding novel ways to apply them to search that provide unique value to users. And don't forget about the potential of multimodal search using vision and language models together. Lots of greenfield there still to explore.

Every big tech company is working on AI search. Every. 
If you want to succeed, then you should focus on a particular niche that is probably not covered by the Big ones and solves a problem to a particular audience.

Something like "An AI search engine  for 1970s VW Beetle spare parts"
